Gallon Capacity of Grease Traps

Grease traps are sized by the gallons per minute (GPM) that they process, not by the gallon capacity that they hold. When deciding which grease trap is right for your application, the important factor is how much fluid will be flowing through the grease trap at any given time, not how much grease will sit in the steel box. If your grease trap holds a smaller amount of grease, you will have to clean it out more frequently, but it will still function properly. However, if your grease trap cannot handle the flow coming through it, it will not work.
